Addictive Sugar Snap Pea Salad

The trick to this salad is to chop all ingredients, especially the sugar snap peas, shallots, and pistachios, into ridiculously small pieces – almost pre-chewed. This makes the salad insanely scoopable and addictive. For the dressing, in a small bowl, whisk together the juice of 1 lemon, 2 tablespoons extra-virgin olive oil, 1 tablespoon Dijon mustard, 2 minced cloves of garlic, 1½ teaspoons pure maple syrup, 1 teaspoon crushed red pepper flakes, ½ teaspoon sea salt, and a dash of black pepper until well combined. In a large bowl, combine the finely chopped sugar snap peas, shallots, and pistachios. Pour the prepared dressing over the salad ingredients and toss everything together until evenly coated. Serve immediately.
