A healthy, high-protein, low-calorie alternative to traditional nachos, using bell peppers as chips and topped with seasoned black beans, cheese, Greek yogurt, and salsa. Designed to be a satisfying and easy recipe for weight loss.
Season the drained and rinsed black beans with the spice blend (garlic powder, onion powder, and chili powder).
Slice the large bell peppers into wide “chips.” Arrange the pepper slices on a baking sheet. Top them with the seasoned beans and shredded Mexican-blend cheese. Bake at 400°F (200°C) for 8–10 minutes, until the cheese melts and the peppers are tender-crisp. Once out of the oven, add Greek yogurt, salsa or pico de gallo, sliced pepperoncini or pickled jalapeños, and any optional toppings like cilantro, scallions, and lime juice.
