Big Cheesy Bowl of Veggies

This recipe is : 1 tbsp olive oil, 3 Kumato tomatoes, 1 small yellow onion and 5 chopped cloves of garlic. 1 chopped zucchini and 1-2 teaspoons of herbs de Provence or Italian seasoning. I also add 1/2 teaspoon of garlic power and pinch of salt and pepper.

Stir and bake at 400°F for 15-20 minutes.

Next stir in 2-3 cups of hearts of palm rice. (You can buy it canned online or at major grocery stores. I bought 2 boxes from Trader Joe’s. )

Stir in 3/4 cups of part skim shredded mozzarella or cheddar. You can of course use dairy free cheese as well.
Makes 4-10 servings depending on your hunger level and how you plan to plate it. It would would amazing as a veggie side for any meal or snack with the @2bmindset weight loss program. Would be great paired with a protein like tofu, shrimp or chicken as a dinner.
