Everything Bagel Cauliflower

Fill a large pot with water and bring to boil over medium heat to bring to boil.
Meanwhile, soak the head of cauliflower in a bowl of water with a tsp vinegar to clean and remove any dirt or bugs.
Line a baking sheet with parchment paper and set aside and Preheat the oven to 400°F.
Submerge the cauliflower into the boiling water for five to seven minutes until a fork pierces easily through the stem. You want it to be tender but remain intact.
While the water is boiling, prepare the spread by mixing the sour cream, everything bagel seasoning and crushed garlic, until well combined.
Carefully remove the cauliflower from the pot of water and place on the baking sheet to let cool.
Using clean hands or gloves, spread the cream mixture all over the cauliflower head, getting into the grooves of the florets and making sure every piece is smothered.
Place the baking sheet in the oven and bake for 15 minutes to let the cream dry up and soak into the cauliflower.
Turn oven to broil for two to five minutes until the top of the cauliflower head is toasted, not burned.
Garnish with chopped chives or parsley, optional.

Notes: triple this recipe to make for meal prep or to host friends and family. It’s so so good.
