Kohlrabi is one of the healthiest and best veggies you can eat. It’s high in fiber and vitamin C, and is a member of the cruciferous family, most widely known for its high antioxidants and reduce Md heart disease and cancer risk. It tastes kind of like a cabbage but without the leaves. The texture is firm and crisp like a chip, making it ideal for making nachos. I tossed the kohlrabi slices with a little non gmo cornstarch and chili lime or tajin seasoning. You can of course also use taco seasoning and remove the corn starch- it just makes it a little crisper. Spray an air fryer or baking sheet and cook for 8-12 minutes or until crispy and cooked through. Top with some cheese or dairy free cheese and broil for 1-3 minutes or until cheese is hot and bubbly. Add Pico de gallo and pickled jalapeños and enjoy as a veggie side. For the @2bmindset , I paired with a protein and turned this into a lunch. If using a light amount cornstarch, it may work as a dinner as well, you just need to try, track and see. As a lunch, it may be good with a sprinkle of beans as well.
