Mushroom Nachos

In a bowl, toss a box of sliced mushrooms with about 2 tablespoons of corn starch and a generous amount (like 2 tsp) of citrus chili spice (e.g., Trader Joe's red label or Tajin). You can also use taco seasoning for a different flavor. Spray your air fryer with avocado, coconut oil, or cooking spray. Toss in your coated mushrooms. Air fry for 10 minutes at 400°F. (Alternatively, you can cook them on a baking sheet or in a skillet.) After 10 minutes, top with 2 tablespoons of shredded cheese or dairy-free cheese and cook for an additional 2 minutes until the cheese is bubbly. You can also place them under a low broiler for 2 minutes. Once done, top with sweet pickled jalapeños and pico de gallo.
