Sexy Rainbow Salad

Chop ALL vegetables (red cabbage, red, orange & yellow bell peppers, cilantro, sweet cherry tomatoes, cucumber, shallot or red onion) super small; this is the secret for the best texture. For the dressing, combine lots of lemon juice, olive oil, salt, garlic powder, lots of cumin, and a little agave or honey. Toss all the chopped vegetables with the dressing. Let it sit for a while so all the flavors can get to know each other. Make a big batch because it tastes even better the second day.
