Veggies that taste like a SNACK! If you’re gonna eat Takis, you might as well get protein and fiber. This recipe is your sign to save for veggies you’ll actually crave. If you go heavy on the Greek yogurt dip, it’s honestly a complete lunch.
For the Takis-Crusted Zucchini Bites:
1. Preheat your air fryer to 375°F (or oven to 400°F).
2. Set up three separate bowls: one for the flour mixed with spices (garlic powder, paprika, salt, and black pepper), one for whisked eggs, and one for the crushed Takis crumbs.
3. Dredge each zucchini slice first in the flour mixture, then in the whisked egg, and finally coat thoroughly with the crushed Takis.
4. Place the coated zucchini slices on parchment paper and lightly spray the tops with oil.
5. Air fry for 10–12 minutes (or bake in the oven for approximately 20 minutes) until they are crispy.
For the Creamy Dip:
1. In a separate bowl, combine the reduced-fat sour cream (or Greek yogurt, or plain non-dairy yogurt) with the pico de gallo.
2. Mix well and serve as a dip for the zucchini bites.
